You can get a first taste of our traditional pasta through the wonderful recipes of Panagiotis and Socrates, at the family tavern Agnantio. There, visitors will enjoy authentic dishes made with our pasta, from chylopites to trahanas and kritharaki, in tasty combinations that highlight the taste of tradition and quality.

Each dish at the tavern Agnantio is a journey into the gastronomic heritage of our land, with fresh ingredients and a special touch from chefs who love cooking and respect tradition. GENNIMA GIS

RECIPES

Whole wheat chylopites with Greek cheese sauce

Materials:

Whole wheat chylopites 500 gr
Manouri feta and anthotyro (grated) 250 gr
1 garlic clove
1 tbsp Oregano
Fresh basil leaves
Fresh mint leaves
4 tbsp Olive oil
Salt, Pepper

Implementation

1. Boil the chylopites in plenty of salted water, but do not drain them.

2. Heat the olive oil in a non-stick pan. We lower the fire. Sauté the chopped garlic for a minute, we don't want it to fry and blacken, just wilt and release its aromas, then remove.

3. Add the cheeses to the pan.

4. With a slotted spoon, pour the chylopites into the pan, with as much water as the spoon can hold. Increase the heat to evaporate the liquids and stir continuously until the ingredients are evenly mixed. Add the herbs.

5. Serve it with freshly ground pepper.

Trahanas soup with tomato and feta cheese

Materials:

1 glass of water Trahanas sweet Gennima Gis
1 liter Vegetable broth
1 tbsp Pellets
1 glass Fresh tomato, chopped
150g feta cheese cut into cubes
6 tbsp Olive oil
Salt, black pepper

Implementation

1. Put the vegetable broth in a large pot and while it is still cold, pour in the trachana. Stir well and let the mixture come to a boil.

2. Pour in the chopped tomato and the paste. Boil the mixture patiently until the trachanas swells and the soup thickens with the lid open.

3. Add a little salt, once the trachanas is well pureed, throw in the crumbled feta, mix, add the pepper and serve the soup hot in plates.

4. Serve with grilled country bread and oregano.

Trahana soup

Materials:

1 cup Trahanas Gennima gis
5-6 cup water
Salt
Peper
Olive oil
Feta cheese

Implementation

1. Pour the water into the pot and immediately, while the water is cold, add the trachana!

2. Stir well over medium heat. Once it boils, add the salt, pepper and olive oil and boil for 10 to 15 minutes, stirring constantly!

3. Finally, as soon as it is ready, add our cheese and it is ready to be eaten.

4. If you want, just before taking it off the heat, add 1 cup of milk. Also during serving we can throw hilopites (trahanophyllo).

Meat soup with kritharaki

Materials:

250 gr Kritharaki Gennima Gis
1 kg of beef
1 Onion, chopped
2 leeks cut into rings
2 Carrots cut into slices
2 whole celery
1 Fresh tomato without the skin, chopped
2 tbsp Olive oil
1 bay leaf
Salt, pepper and lemon juice

Implementation

1. Boil the meat in plenty of salted water with a little salt, while occasionally removing the foam that is created with a spoon, (it is good to scald the meat first and change the water.)

2. When the meat starts to soften, add the onion, leeks, carrots, celery and bay leaf.

3. After the meat has boiled well, add the olive oil, salt and pepper and the kritharaki.

4. Finally pour the lemon juice and serve.

Prawns with chylopites

Materials:

500 g chylopites Gennima Gis
10 large shrimps
1 medium Onion
300g grated tomato
1 glass of wine White dry wine
1/3 cup Olive Oil
1 cup Grated cephalograviera
Parsley
Salt, Pepper

Implementation

1. In an open pot, saute the shrimps for 1 minute on each side.

2. Add the onion and continue sauteing for another 1-2 minutes.

3. Deglaze with the wine and add the tomato.

4. Pour some water and when it starts to boil, add the chylopites.

5. Boil for 3 minutes, remove from the heat, add the fresh parsley and cephalograviera and mix.

6. Sprinkle with freshly ground pepper and serve.

Rooster with chylopites

Materials:

500 g chylopites Gennima Gis
1 Country rooster
Olive Oil
1 Onion
1 Pepper
1 Carrot
Fresh tomato
Spice, bay leaf
1 glass of red wine
Salt, Pepper

Implementation

1. Cut the rooster into portions and fry it lightly.

2. Sauté the vegetables, add the rooster, deglaze with wine, add the fresh tomato and let it boil.

3. After boiling, place it in a clay pot together with the chylopites for 10 minutes in the oven.
